  1. Prepare the mashed potatoes with milk according to the instructions on the packet. Stir the butter, salt, pepper and a pinch of nutmeg into the finished puree.
  2. Then pour the mixture into a piping bag with a star nozzle and squirt the duchess potatoes onto a baking sheet lined with baking paper.
  3. Mix the egg yolks with a little water and brush the potatoes with it. Then bake for about 10 minutes at 180 degrees.
